This pan worked SO well. Baked a perfect loaf. Very heavy-duty pan that I feel like I'll have for years to come. And just a little brushed on oil on the inside and my bread released beautifully. My only complaint is that it didn't come with any baking instructions. It's a new way to bake bread for some, so I wish it had come with some basic instructions. I had to google around to get some instructions (King Arthur Flour's Pain de Mie recipe is what I used for technique, but used my own bread recipe for the dough).Otherwise, I am very pleased with this pan and the service (arrived quickly and in great shape). I highly recommend this pan!

OMG - I am systematically replacing all of my bread pans with the USA pans. They are wonderful. I started with a smaller loaf pan several years ago and have graduated to the Pullman loaf pans. Non stick but not dark so my bread comes out beautiful. These pans are taller so my bread is supported while it's rising and the loaves look so delicious. My almond bread recipe comes out great in these pans, too. They're also good for making lasagna - perfect width and better portion control. Make several pans and freeze them for later. Works great.

Great pan, very sturdy. The bread had evenly browned crust and good texture. Easy clean up. The side folds on my pan are sharp enough to cut my finger when washing, so some extra caution is required.

Quality tin

A very good quality tin which I’m sure will give many years use. Although it was quite expensive, as with so many things you only get what you pay for and it is a large size too! I had a go at making the Pain de Mie loaf using the Nick Malgieri recipe for this size tin (from the website) I had fresh yeast and wasn’t so sure of how much to use. I didn’t get quite the rise I was hoping for and it took a while to make but the flavour and texture is delicious - was worth it and I will try again. I learnt a number of new techniques along the way too! Brilliant service from Bakery bits and love the website. Really enjoy reading all the articles and recipes, they’re interesting and helpful to have available. Thank you!

Stiff lid? Try reversing the pan

I was initially concerned at how stiff the lid was to slide off and on, then eventually figured out it was better to go from the other side. Since then, the pan has been impeccable. It hasn’t let me down since.

My Mom first introduced me to USA Pan a few years ago by giving me a muffin pan. It is so much better than any other muffin pan I had ever owned. I never have to scrape gunk off or use liners; the muffins just fall right out! Since then, I have added the mini muffin pan and 2 different sizes of cookie/baking sheets to my collection and I greatly enjoy them all! I should add, I do often still spray the muffin pan with PAM or whatever, but it does seem to work fine without it, too. My baking sheet I don't spray with anything and haven't had any issues.

I was so impressed with my first loaf from this tin that I mailed a picture to a friend, who dubbed it a "devil loaf' because it looked so unnaturally perfect. I've made a few different loaves with it since and it just seems to behave well with any dough, creating a nice, even crumb and a thin crust. The compression effect of the lid is a godsend if you're fed up buying loaves with gaping holes that allow filling or spread to ooze out. I didn't have to do anything clever, either – generally I just use the same guesswork recipe I use for any loaf, which is roughly 500g of flour, a teaspoon of salt, any yeast (works as well with dried as fresh) and a glug of oil or melted butter. (I just add warm water until the dough feels right. It cleans incredibly easily, and as other reviewers have said, loaves just slide out even if you don't grease it. I'm always wary of investing in expensive kitchen equipment because so many things I've bought in the past have turned out to be style at the expense of performance, but one of these tins (and a Brod & Taylor folding proofer) will perfect your breadmaking. You can't go wrong with it. I might even venture into the unknown and try baking cakes in it, which is well outside my comfort zone. Really top-rate piece of kit – I love using it.

Very solid loaf pan

So far I've made two great loafs. There were zero issues with sticking. This pan has great construction quality. I haven't made loafs with the lid on yet. The lid is very tight and can be a struggle to get on and off (which has nothing to do with why I haven't used it, mind you)

I wanted to get away from store bread because of all the high fructose corn syrup, but you don't always want a crusty artisan loaf. This makes perfect sandwich bread. Most of the "Pullman" specific recipes I found had ingredients I didn't have or didn't want to bother with. I found that if you have a good recipe for 2 8x4 loaves, and you multiply the ingredients by 1.5, you will make enough dough for 2 13x4x4 loaves. (About 2 lbs each, about 20 thinish slices.) I store 1 in the freezer until we need it. Pans are pricey but perform well and clean easily. I lightly grease mine but probably don't need to due to the nonstick coating (in fact, too much and it drops out the creases so you should place foil or a pan beneath them to prevent smoke!). I have been using this pan to bake sandwich bread every week since I purchased it almost 5 months ago. It is so easy to use and the loaves it produces turn out beautifully and are very visually appealing! The pan is solid and well-made, it arrived in good condition, and it releases loaves easily whether greased or not. (This is true of the lid as well; I've never had dough stick to the lid, or the lid get stuck or be hard to remove.) If I clean the pan soon after using, then I typically put the pan and lid back into the oven (turned off but still hot) after wiping them dry; this helps to dry any water droplets in the corners or hidden in the folds of the metal.Loaves made in this pan come out square with straight corners. (The slices of most supermarket breads and loaves baked in standard loaf pans are too wide and/or tall to fit into the 4" x 4" space, which meant that before I had the Pullman pan I always had to cut the extra off of their sandwiches and fit it into another compartment in the lunch tray.) So I was really happy to get the Pullman pan for that reason. But even when I'm not packing lunch boxes, it's pleasing to be able to cut toast or sandwiches into true triangles with bread baked in this pan!I have baked white, whole wheat, and rye loaves in this pan. If you go by weight, you can use a recipe for a sandwich loaf even if it's not specifically written for a Pullman pan (or "Pain de Mie.") I've baked bread using the "Farmhouse White" recipe from the Farmgirl Fare website. (It makes enough dough for 3 loaves and I use about 2 1/4 lb. of dough for the Pullman pan.) I've also used recipes on the King Arthur Flour website specifically for Pullman loaves, and other sandwich loaves.The Bed Bath & Beyond price for this item was the best I found. It's a good deal, particularly if you have a coupon to use! I would love to buy another pan and I hope they come back into stock.
