The naturally constant temperature and humidity of the caves offer the ideal conditions for storing and maturing cheddar. The porous nature of the cheese enables it to take on distinctive earthy and nutty flavours from the surrounding atmosphere. This delicious cheddar is firm and cream-coloured.
