This Scanpan CTX 32cm Chef Pan with Lid has a 5-ply multi-layer construction of aluminium and stainless steel for optimum heat distribution without hot spots. I don't just like my deep sauté pan, I love it! It replaces a similar pan that I had used for 30 years, which had a cast iron handle, it was a more sculptural pan but the nonstick feature was not as durable as Scanpan's and this was its undoing. This pan has more flat surface area for frying and the deep sides prevent splatter. As I do the cleaning this is an important feature. The partial glass cover allows inspection of contents without removal. The pan allows braising, sautéing and frying in a light weight large enough vessel. Very pleased. It joins my Scanpan Wok on my pot rack where I believe it feels at home! Richard

Very happy with the Scanpan CTX Saute pan, after going to a nicer cephalon saute and fry pan two years ago, and thoroughly using it, I decided to dive into a higher quality pan for a replacement . I've gone far from the cheap Target sets I used to use once upon a time, unfortunately I can't say the same about my cooking but it has improved in the culinary journey to warrant this nicer set.I purchased a second pan as a gift to someone who is a professional chef. They couldn't believe the price I paid for it and needless to say were very happy to accept and try it out. Great drop!

I want to like this pot, and it's the only nonstick pot I've got, so I try. Unlike the Scanpan Classic cookware that I've had, this one's ability to be nonstick has deteriorated at a much faster rate. I've had this one for a year or so, and I'd have to get something so scratchy to clean the interior bottom that I'd probably damage the pot. Pretty sure it was a milk/cream burn, but it's never come off. All the other Scanpan Classic stuff I've had has been "magical" in nature.I do love the heft of these CTX pans. Heat retention is better.

The pan is beautiful and works well. One star off for the design of the lid. It's not smooth like the other scanpan kids. It has two pointy screws and the edge of the rim is raised which makes washing by hand a bit difficult.
Pan seems great well made, heavy duty but have not used it yet. I tried for size to put it in an in wall-oven but it doesn't fit handle is too long. I called Scan pan to see if they could exchange it for the shorter handle (CTX Chef pan same size) customer rep said NO they could not do that so I was left quite disappointed. I would have loved to use it in the oven but I'm not in a position to buy another one since they are pricey. Another thing I noticed was the edge under the lid seems thin and sharp have to be mindful when handling especially if washing it by hand.
I bought this 5.5qt pan to replace a non-stick 5qt All Clad. It isn't 5.5qts! Literally filled it with 4 quarts of liquid. My old All Clad was 5qt filled the same way.
My favorite pan by far. I love ScanPan CS or CTX in general, but this is my go to pan. High sides provide ultimate flexibility in use and keeps my cooktop cleaner. Works well with induction and gas cooktops.
Absolutely love this pan!! Zero stick, and feels substantial (doesn?t move around on the burner). It?s pretty heavy, which can be a drawback at times, but it?s worth it. Definitely far superior to the GreenPan I was using previously, which became chipped and unusable within a month.One thing to keep in mind though, is that as a nonstick pan, it?s not that good for browning or searing. I use my Le Creuset enamel or my stainless steel for that. But that?s not unique to ScanPan, it?s true of any nonstick pan.I?m very careful to keep the heat at medium or below, and hand wash with a soft sponge and mild dish soap. But it cleans up like a dream - nothing sticks!
This is an expensive pan, I have had it a little over a year, and the non stick is peeling off very badly. What’s worse is that there is only a 30 day guarantee for this product on this website. I would recommend buying the le creuset from another retailer which has a lifetime warranty and lasts infinitely longer. 30 day warranty for a £150 pan is outrageous, I wish I’d checked the guarantee when I bought it.
I highly recommend scanpans. For all cooking needs. They cook evenly and quickly. Clean up is soooooo easy.
