Wusthof - Classic Ikon Santoku Knife 17cm
As an elegant professional chef's knife from Solingen, the Wüsthof knives of the Classic Ikon series impress even the most discerning idealists. This knife is a Japanese chef's knife with a hollow edge, offering a sharp culinary experience with timeless design. The Japanese Santoku knife (17 cm blade) is robust and versatile: whether for chopping and mincing herbs, vegetables, and fruits, or for slicing meat and fish. It features an extremely sharp blade for paper-thin cuts. The durable blade of the Santoku knife receives its final polish by hand, ensuring its extreme sharpness. The double-sided weighting of the handle (double bolster) provides astonishingly precise handling, even with fast cutting techniques. The ground hollows (small indentations) create air pockets, preventing fine slices from sticking. The ergonomic handle, with a slight curve at the front, fits particularly securely in the hand. As an ideally balanced chef's knife, the Wüsthof Classic Ikon impresses every professional chef and is the official cooking tool of the German national culinary team, thanks to its sharp blade. Premium knives, made in Germany, forged in Solingen.

The Santoku combines Western and Eastern influences. This blade is very well made and if you like type it will do fine. The Kai is both aesthetically and ergonomically superior in my view, but the cobalt steel had serious corrosion issues.1) The action is somewhat limited. I think the classic Asian slicer (cleaver) is more comfortable and has a cleaner appearance.2) The Wusthof has a Granaton (sculptured) blade for food release. Unlike many, Wusthof has properly positioned this right at the edge. Howver, in my test, it did not make any noticeable difference.3) If used as a chopper, the action is not as nice as a 9 inch and up (10 inch for French style) Western blade.4) To repeat mystelf, having used other Asian style knifes, the handle feel and appearance are ... MoreThe Santoku combines Western and Eastern influences. My partner are I are avid home cooks. We do a fair amount of chopping, dicing, slicing and mincing. When he mentioned something about needing a new santoku knife, I started searching. A few months earlier, we'd been looking for a new set of steak knives and the Ikon series stood out to us for the quality of the construction and the feel of the slightly curved handle. I checked out their santoku version and decided to go for it. It is well worth the price. The blade is wicked sharp. The size is right in that sweet spot for being big enough to slice through a large onion or small melon in one swoop, but not so big that you are constantly worrying about taking off a stray finger. The knife is well balanced, and heavy enough to make chopping dense foods a breeze. My ... MoreMy partner are I are avid home cooks. We do a fair amount of chopping, dicing, slicing and mincing. I'm a bit of a purist and prefer the old school handles, but it doesn't affect the knife's performance which is spectacular. CAVEAT - I highly recommend holding this knife, or any in the ikon series, before you buy them. If you're used to a more traditional handle, like me, it may be hard to switch your grip to the slightly curved handle. But, overall, this is a very well constructed knife with great performance. Highly recommend.

Being a Japanese knife fan, purchasing a German Wusthof Classic Ikon chef芒鈧劉s knife was going to be a risk for me. No fear..... what a great knife. Fits well into my hand, well balanced, very very sharp, cuts with ease and feels quality. My only reservation about this knife is it芒鈧劉s weight. Compared to my Kasumi, this Wusthof is heavy. It took a little time to get use to the weight. Japanese knives are light and well balanced. Beware...this knife (like all quality knives) needs special looking after. No dishwasher for cleaning, no chopping bones or frozen food, it芒鈧劉s hand washing and drying. A real bonus with this knife is that Wusthof offers free lifetime sharpening. Recommend

This is one high quality kitchen knife! I couldn’t wait to try out this knife and it made my day when it arrived! This knife makes slicing and dicing the toughest vegetables and crusty bread a breeze! I love rutabaga yet trying to cut into a raw one can be treacherous and exhausting. This knife went through them with such ease I first thought they had gone soft and would need to throw them out. Not so! It also cut through a loaf of crusty French bread without crumbling, cracking or squishing the loaf. The trick is to stick the tip in and then slice downward in one smooth motion. It’s like a warm knife going through butter! I will be purchasing more knives from the Wusthof Classic Ikon line right away! Highly recommended!!
My new favourite knife! It is super sharp and a joy to use. I thought my other knives were sharp until I started using my new Wusthof Santoku. The price was pretty great too, as I have seen the same knife advertised for a lot more elsewhere. And it only took a few days to arrive!
This knife is a great addition to my set. It's perfect for the smaller cutting/chopping I need to do. The slightly heavier handle makes my cutting/chopping much easier and I like the feel of the "curved" handle. It's my new and much used all around knife. I highly recommend this knife. I also recommend buying at Sur La Table I went in and the knife was not in stock. Instead of just telling me I could order it online, the staff ordered it for me and I had it within one week.
Most incredible kitchen utensil ever!I waited too long to make this purchase! The service at Sur la Table was incredible as i was taught how to use a santuko knife. This knife glides through food and minces or thin-sluces like the ease through butter. Even my children enjoy food-prep with their Wüsthof knife sets!
First impressions are great! What a knife. Razor sharp right out the box. Feels great in the hand and cut beautifully. I guess time will tell for how long it stays this sharp. Fully intent on buy a range of these knives.
Although I own many Wustof Classic series knives this Santoku is my first in the Ikon series and the feel in hand is amazing. Incredibly sharp like all my other Wustofs, the feel and balance of this knife make precise slicing a breeze. I can easily slice super thin potatoes for dauphinoise quickly and consistently. More Ikons may be in order.
