The Miyabi birchwood nakiri is a beautiful work of art. It came incredibly sharp out of the box and cuts as good as it looks. Fit and finish is outstanding and while Iâve only had it for one week, my cutting experience with it is fantastic so far. Balance of the knife is right about at the middle point. Handle comfort is great. As is evident from photos this nakiri has a little bit of curve and a slighlty slopes tip rather than a squared off edge. This makes its shape slightly different than most nakiris although for all practical purposes it performs the same. There are many good nakiris that can be found at a lower price point but the birchwood series is clearly for a buyer who is also interested in the aesthetic of the knife. And this is a work of art.

Incredibly beautiful, impossibly sharp, amazingly practical. Can a knife be sexy? In this case, it think so. The blade has just the right heft and balance, and the birchwood handle feels great in my hand. I am puzzled as to why Miyabi didnât seal or protect the raw wood handles, but I see that as an opportunity to personalize my new knife. This knife performs as well as it looks. The Damascus cladding and hamon edge are amazing to look at. It makes cooking and preparing things that much more fun and visually appealing. Every time I set any of my Miyabi birchwoods to the side after dicing up an onion it gives me the same feeling of appreciation. Itâs art, itâs beauty, and itâs performance all in the same package. Whatâs not love?P.S. I oil my handles with mineral oil and then a mineral oil beeswax mixture. It protects and beautifies the handles to an even higher level than when they come out of the box. Love my Miyabis!!

Perfect for when youâre cutting a lot of veggies (especially root veggies). As a tall guy (6â1â) with big hands itâs comfortable for cutting for a long period of time when preparing holiday meals or get togethers. I would definitely recommend this for the home chef thatâs looking to upgrade their experience in the kitchen. Bonus: the Birchwood looks good against almost any backdrop.
This knife is a delightful refresh m of a classic design, with just a touch more belly than most nakiri blades. This makes for a more comfortable user experience. The handle will darken with use, and edge retention is great!
I used it mainly to cut vegetables especially celery. It is very sharp and the weight is not heavy. I have small hands and the grip is very comfortable. I have been using over a month and the blade still sharp. I would recommend it.
First when you pick it up you notice the feel of the birchwood handleâŠit sits in your fingers wonderfully! Next, the sharpness is fantastic! I let my wife carve up some very ripe tomatoesâŠbig mistake! She loved how easily it sliced thru them. Now it will become HER go to knife! Gotta hide it now! Haha
This knife is so awesome I look forward to creating culinary dishes that excite with both the eyes, nose and tast buds! SOOOOO sharp it cuts thru tomatoes with ease and no pressure applied at all - can make 1cm dice with it easily. Loking forward to adding more of these amazing knives to my kitchen soon!
Thrilled to have an artisan Japanese vegetable knife for my home cooking projects. I found it on the website back in stock on the very day my late disabled brother Timâs successful guardianship case was concluded. I will use it often in his memory and pass it along to our daughters some day.
I am the proud owner of several other Miyabi Birchwood knives, and purchased the Nakari as soon as it came out!The Birchwood line is made out of SG2 steel which is quite hard, and keeps the blade edge nice and sharp. When they do need sharpening, its so easy to bring the knife back to the original edge, which makes me feel like I'm always working with a brand new knife! The Birchwood handle is so stylish and looks great in my new kitchen.Nakari knives are so useful and can be used for mincing, cutting, slicing and dicing. The shape of the blade is wider than a chefs knife which makes it really easy to scoop items once cut. I can work with the Nakari without experiencing hand fatique, and find myself grabbing it when I need tons of vegetables for soups, stocks ... MoreI am the proud owner of several other Miyabi Birchwood knives, and purchased the Nakari as soon as it came out!The Birchwood line is made out of SG2 steel which is quite hard, and keeps the blade edge nice and sharp.
